Oliva has been considered a symbol of peace since the Great Flood. Noah released a dove several times to scout, to find out if the ark would soon land on the ground. And one day he returned with an olive branch in his beak. Noah realized that God changed his anger to mercy and forgave people. The olive tree was the first plant to grow on earth when the flood ended. In ancient Egypt, the olive tree was associated with the name of the goddess Isis, as if it was her gift to people. Isis in Egyptian mythology, being the supreme goddess, was also responsible for fertility. Olive oil has been sacred since ancient times. The cultivation of the olive can be safely recorded as one of the first achievements of human civilization: for the first time, the olive began to be grown in Crete in the third millennium BC. For a long time, the olive was grown independently in Crete and Syria. Images of olives are found on ancient Egyptian vases and amphoras. The Greeks believed that the olive tree was given to them by the goddess of wisdom Athena, the patroness of peaceful labor. The settlers took the olive with them to the New World - along with grapes - not only as food, but also for ritual purposes. California has now become one of the main suppliers of olives outside the Mediterranean. The average lifespan of an olive is 500 years, and some trees reach 1500 years of age. Over 90% of the world's olive harvest is used to make oil, and almost 98% of the land devoted to olive growing is located in the Mediterranean region. In total, there are about 500 million olive trees in Europe. Olive oil is the only oil that can be eaten without further processing.
